Panini Time

I have been so busy taking care of two kids, preparing for VBS and getting ready for upcoming events here in town.  When I have had time to do other things, I have needed to tackle the pile(s) of laundry that were haunting me in my sleep.  No really... I was dreaming about them.  Moving on... Finally, yesterday I made a brand new recipe that the family LOVED.  This is a Ham and Onion Panini.  It is super easy, and super cheap.  My favorite words- easy and cheap.  So this is how it all goes down. 

Isn't it lovely???

2 onions, sliced
Panini slices (I used whole wheat pita pockets)
Deli ham
Provolone cheese slices

Caramelize the onions in 2T of EVOO.
I spent about 30 minutes letting them slowly cook.

Spit your pita pockets and fill them with the ham, tomato, cheese, pickle and onion.
I put my paninis inside of our quesadilla maker to toast, but if you have an inside grill or forman grill that would work great as well.

I threw some chips on the side and served immediately.


How's that for easy and cheap???  Bon appetite!
