Wheat Banana Bread

I absolutely love anything that is jam-packed with carbs.  Unfortunately, I sometimes battle with high-blood sugars, so this isn't a very good vice for me to have.  I adapted my mom's banana bread recipe to make it a little bit healthier.  I choose to not only use white flour, but whole wheat flour as well.  I don't go all the way wheat because I have a hubby who still likes things starchy and unhealthy.  What I normally do is do half white flour and half whole wheat flour.  I feel better about the food and he still thinks it tastes good. 

Okay, here is the ingredient list:

1/2 c shortening
1/2 c sugar
1 c white flour
1 c whole wheat flour
1 t. baking powder
1/2 c chopped pecans (optional)
2 beaten eggs
1 1/2c mashed bananas
1/2 t baking soda
1/4 t salt


First thing, you throw in a block of fattening goodness (shortening) and 1/2c sugar and cream that in your mixer.


Then, you will add your bananas and eggs- mixing until thoroughly combined.

Sift flour, salt, soda, and baking powder and add to the creamed mixture.

The pink and black flowered shirt in the top right corner is my "helper".  Everyone needs a helper, right??
Stir in some pecans if you would like... and I do like.


Grease your pan with shortening and flour.  I usually stick a papertowel in my shortening can, grab some and then smear it all over my baking pan.  Then, I sprinkle flour in my pan.  Pour batter in the pan and bake uncovered at 350 for 40-50 minutes. 


We didn't wait for this to cool before we dug in.  It was so yummy and satisfying.  Now I need to go run a couple miles to work it all off.  But, I think I will just sit and watch the Royal Wedding instead.  :)
