Mexican Lasagna

We love tacos, enchiladas, and lasagna.  This recipe is all of those piled into one... heaven on a plate!

1lb. ground beef, cooked and drained
1 packet enchilada mix
1/2 cup water
1 can 8 oz. tomato sauce
12 oz frozen corn
1 can black beans
1 pkg regular, flour tortillas
2 cups shredded cheddar cheese (buy the block and shred it... much better that way!)

Mix the beef, enchilada mix, 1/2 cup water, and tomato sauce together.  Spray a 9 x 13 pan with cooking spray and place two tortillas on the bottom side-by-side.  Dish up some of the meat mixture to cover the tortillas and top with shredded cheese.  Repeat this one more time and then place two tortillas on the top to "seal" the dish.  Bake for 30 minutes on 350 degrees.  Serve with lettuce, salsa, guacamole, or sour cream.  

It is so yummy!!!!
