Favorite Christmas Books

With it being Christmas Eve (yippee!!!) I thought I would share with y'all two of our all time favorite Christmas books for the kids.

The first one was given to us by my mom and the kids love it.  Actually, it is by far my favorite Christmas book.  It is funny and heartwarming at the same time.  I laugh in the beginning and can barely keep tears from my eyes come the end.  It is also why Ella called baby #3 "humphrey" before she was born.

The second book was a gift for Ella from her Aunt and Uncle.  This is a simple book that I'm sure most of you have at home or have read before.  We love that it explains Jesus to the kids in such true, simple terms.
Both kids love this one, too.

Instagram Dump

I am getting in the habit of going on bloggy detox.  I will blog consistently for a few weeks and then take a little siesta.  I guess that is what happens when life gets crowded with lists of to-dos and kiddos need a mommy to play, teach, and love on them.  I think the blog willingly takes a back seat to the more important things in life- family time. 

Here are a few of my latest Instagram toppings.  

Christmas ornaments for the great-grandmas. Because, what else do elderly women need?  More junk to sift through when they should be enjoying their old age?  Not thinking so...

Chipotle Chicken Salad

I found this recipe on Pinterest and decided to give it a try.  
Mark and I actually both thought that this would be so yummy wrapped inside a flour tortilla and served as a chicken wrap.  You try it and decide for yourself.  One thing is for certain... use fresh cilantro.  You can get away with dried cilantro in some recipes, but not this one!

Chipotle Chicken Salad
  • 1/3 cup chopped fresh cilantro
  • 2/3 cup light sour cream
  • 1 tablespoon minced chipotle chile, canned in adobo sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 teaspoons fresh lime juice
  • 1/4 teaspoon salt
  • 4 cups shredded romaine lettuce
  • 2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced peeled avocado
  • 1/3 cup thinly vertically sliced red onion
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained
To prepare dressing, combine first 7 ingredients, stirring well.
To prepare salad, combine lettuce and remaining ingredients in a large bowl. Drizzle dressing over salad; toss gently to coat. Serve immediately.
Tip: Add a spoonful of adobo sauce for a spicier salad. Kidney or pinto beans also taste great in this dish.
