I guess you could say I’m a chicken kind of girl. I don’t have a problem with people eating beef and such, but I just don’t like the taste or texture. The hubs on the other hand salivates at the thought of a juicy steak. In order to be considerate of his desire to chomp on the icky-ness that is steak… I make this stir fry. I even like it. The sauce is so yummy that I could probably eat it all by myself. The steak stays tender and the rice soaks up the sauce leaving it flavorful and delish. This is also from Jessica Seinfeld’s cookbook Double Delicious. I love, love, love that cookbook. Here is how it went down:
Mix the marinade and add the beef:
Let the beef sit in the marinade for 20 minutes:
I pulled out 1/4 c carrot puree from the freezer. I have several different purees already frozen in the freezer and ready to use. Have a family member that doesn’t like carrots???
No problem-o…the carrot puree gets mixed in the stir fry sauce… it’s totally camoflauged!
While the meat marinades, I mix up the sauce for the stir fry.
I heat EVOO in a HOT skillet. I make sure it is piping hot so it sears the meat appropiately.
I remove the meat and add the broccoli to the skillet. This makes the broccoli taste sooooo good. My kids love this broccoli because it has so much flavor from the marinade.
I add the sauce and meat to the broccoli and cook until the sauce thickens. I dish it out and serve. YUM!
