If you like rice… you will LOVE this recipe. If you don’t like rice, I think you will still enjoy this recipe.
Here are the details:
1/3 cup chopped onion
1/3 cup chopped celery
1 tbsp. butter
*put in large sauce pan and saute until tender
1 cup (I used 1 1/2 cups) long grain rice
1/3 cup (I used 1/2 cup) dried cranberries
*add to above mixture and brown for a few minutes
2 cups beef broth
*add and bring to a boil.
reduce heat and simmer for 10-15 minutes
until rice is tender and fluffy
