Sourdough Monkey Bread

Monkey bread is a delicious breakfast dish that tastes like bite sized cinnamon rolls covered in a gooey frosting. This recipe has an additional perk by incorporating a sourdough bread in this simple monkey bread.

Equipment

Ingredients
  

Sourdough Bread

  • ½ cup active sourdough starter
  • ¼ cup sugar
  • ¾ cups warm water
  • ¼ cup melted butter
  • 2 cups unbleached all-purpose flour

Cinnamon Sugar Mixture

  • 1 cup sugar
  • 3 tablespoons ground cinnamon

Powdered Sugar Icing

  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoons heavy cream or milk

Instructions
 

  • Feed your sourdough starter so it is nice and bubbly. About 2 hours prior to making your dough.
  • In a stand mixer, add in your bread dough ingredients: active starter, flour, sugar, warm water, salt, melted butter and mix with a dough hook for 10 minutes until the dough is smooth.
  • Let your dough rise for 6-8 hours in a warm place. Cover it with plastic wrap.
  • After your dough has had a chance to ferment and rise, dump it out on a very lightly floured surface and cut the dough into small, 1 inch balls.
  • In a small mixing bowl melt butter. In another small bowl combine the cinnamon and sugar.
  • Roll the dough balls in the butter and then into the cinnamon-sugar mixture.
  • Place the sugared dough into a well greased bundt pan and cover with plastic wrap. Allow it to rise in a warm place for another 1-2 hours.
  • Once the pull apart monkey bread has risen, bake in a preheated 350°F oven for 45 minutes.
  • Allow the bread to cool for 10 minutes and turn out onto a serving platter.
  • Mix the icing ingredients together in a pourable measuring cup and whisk until smooth. Pour over the finished bread.

Notes

To refrigerate overnight:
Once you add the dough balls to the bundt pan, cover it with plastic wrap and put it in the refrigerator overnight.
For best results, pull the monkey bread out of the refrigerator the next morning and allow it to sit on the kitchen counter for 1-2 hours and then bake in a preheated oven.
Bake according to the directions, making sure you test the inside of the loaf for doneness prior to pulling it out of the oven.
