The perfect, basic rotisserie chicken salad recipe that you can make as is or adapt to create a new take on an old classic. This recipe is easy and delicious no matter what you use!

- 3 cups diced rotisserie chicken
- 3 stalks diced celery
- ¼ cup diced red onion
- ½ cup diced red apple, or grapes
- ½ cup mayonnaise
- ¼ cup plain greek yogurt
- 2 tablespoons dijon mustard
- ½ teaspoon salt and black pepper
Dice your chicken, celery, onion, and apple and add to a large mixing bowl.
In a smaller mixing bowl, add the mayonnaise, yogurt, mustard, salt, and pepper. Mix well.
Pour the dressing in the large bowl with the chicken, celery, onion, and apple. Mix well.
Add more salt and pepper to taste.
Serve on a croissant, bagel, crackers, or toast with a slice of cheese.
Substitutes for a Whole Chicken in this recipe
- Cooked, diced chicken breasts– If you don’t want to use a rotisserie chicken, season some chicken breasts, cook them, and cut them up!
- Shredded chicken from the grocery store– Our store will have containers full of what they call “picked chicken” and it makes this meal so simple.
- Canned Chicken– You can buy this like you would tuna and use it when you’re in a pinch.
