Equipment

  • 1 stand mixer or hand mixer

Ingredients
  

  • 8 ounces cream cheese, no non or low fat
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoons lemon juice
  • 1 cup heavy whipping cream

Instructions
 

  • In a mixing bowl, add cream cheese and powdered sugar. Use a stand mixer or egg beater to mix them together, on high speed, until they are light and fluffy.
  • Add vanilla and lemon juice, and continue mixing until everything is combined.
  • Add the heavy whipping cream, and keep on mixing. This is the final mix of the filling, and you’ll want to mix until the crepe filling is smooth.

Notes

Let your crepes cool down before spreading them with the filling!
Otherwise, the cream cheese in the filling will start to melt, and you'll find yourself with a mess.
Allowing the crepes to cool prior to spreading on the filling will let you roll them up with ease.
