- 3½ cups peeled, diced potatoes
- ⅓ cup diced celery
- ⅓ cup finely diced onion
- 3¼ cups water
- 2 tablespoons chicken boullion granules
- ½ teaspoon salt
- 1 teaspoon black ground pepper
- 5 tablespoons butter
- ¼ cup all purpose flour
- 2 cups whole milk
In a large stock pot, combine the potatoes, celery, onion, and water. Bring to a boil and then reduce the heat and cook over medium until the potatoes are fork tender.
Stir in the chicken bouillon, salt and pepper.
Make a roux in a small saucepan by melting the butter. Add in the flour and whisk until the butter and flour are combined. Slowly whisk in the milk and whisk until the roux begins to thicken.
Add the roux to the stock pot and stir to combine. Heat the soup and serve.
- Make sure that you chop all of the ingredients to roughly the same size so that everything cooks for the same amount of time.
- Prep the ingredients ahead of time to make this soup even quicker. You can even make this soup in a slow cooker for the days when you need something ready now.
