Equipment

  • 1 8" square pan
  • 1 large bowl
  • 1 electric mixer or stand mixer
  • 1 spatula
  • parchment paper
  • 1 small bowl

Ingredients
  

  • cups all purpose flour
  • cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter room temperature
  • 1 tsp vanilla
  • ¼ cup buttermilk room temperature
  • ¼ cup whole milk room temperature
  • 1 egg whisked
  • 1 tbsp avocado oil

Crum Topping

  • 6 tbsp butter melted
  • ½ cup all purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar

Strawberry Filling

  • 3 cups strawberries diced, fresh
  • 3 tbsp all purpose flour
  • 1 tbsp sugar
  • 1 tbsp lemon juice

Instructions
 

  • Preheat oven to 350 degrees F. Grease an 8 inch square cake pan and line with parchment paper.
  • In the bowl of your electric mixer, add the flour, sugar, baking powder, and salt. Mix for 20 seconds on low.
  • Next, add the butter, vanilla, milk, and buttermilk. Mix on medium speed until the ingredients are just combined. Make sure to scrape down the sides of the bowl with a spatula to ensure that all the ingredients are well mixed.
  • In a small bowl, mix the egg and oil together with a whisk. With your mixer on low speed, slowly add the egg and oil mixture to the batter. Mix for 15 seconds and then stop.
  • Pour your batter into your prepared cake pan.
  • Spread your strawberry mixture evenly over the top of your batter.
  • Add your crumble to the top of the cake and strawberries, making sure that it is evenly distributed over the desert.
  • Bake for 45-60 minutes, or until the cake is done. If you are unsure, if your cake is fully cooked, insert a clean toothpick into the center of the cake. If it comes out clean, it's done. Set your cake on a wire cooling rack and allow it to completely cool.

Crumble

  • For the crumb topping, mix together the butter, flour, sugar, and brown sugar in a medium bowl with a fork.

Strawberries

  • Combine the chopped strawberries, flour, sugar, and lemon juice into a medium bowl and mix until the strawberries are coated with the other ingredients.

Notes

  • Add parchment paper to the bottom of your pan to keep the cake from sticking.
  • Use room temperature ingredients so they cream easily and give your cake a perfect texture.
  • Do not over-bake so that the cake does not become dry.
  • When baking, it's always important to measure your ingredients carefully and follow the directions.
  • Try not to open the oven too much during the baking process.
