Equipment

  • 1 mandoline slicer or sharp knife

Ingredients
  

  • 7 cups sliced apples
  • teaspoons ground cinnamon
  • 7 tablespoons unsalted butter
  • 2 tablespoons cornstarch
  • ¼ cup water
  • 1 cup sugar

Instructions
 

  • In a saucepan on medium heat, melt the butter.
  • While the butter melts, whisk the water and cornstarch together in a bowl.
  • Slowly whisk the cornstarch slurry into the butter.
  • Turn up the heat until you get a low boil and whisk continuously until the mixture begins to thicken.
  • Remove from heat.
  • In a large bowl, add your apples, cinnamon, and sugar. Mix to coat the apples.
  • Pour the butter mixture over the apples and stir thoroughly.
  • Once cooled, use in a prepared pie crust or store it for later in a ziploc bag in the freezer or a large mason jar.

Notes

If you're going to use the pie filling right away, it's best to cook it on low heat in a large saucepan until the apples soften and cook a bit. 
Cool it and pour it into a pie crust to bake the rest of the way.
