Summer Berry Salad Recipe

Ingredients
  

  • 6 cups mixed greens
  • 4 cups mixed berries
  • ½ cup crumbled feta
  • ½ cup candied pecans
  • ¼ cup chopped fresh mint leaves

Instructions
 

  • Start by washing the berries and greens in a large bowl of cold water.
  • Remove any stems or leaves that are wilted or damaged. Once the berries and greens are clean, pat them dry with a paper towel or clean kitchen towel.
  • Next, add the berries, greens, feta cheese, candied pecans, and chopped mint leaves to a large bowl. Use a large spoon or tongs to gently mix the ingredients together.
  • To finish the salad, you will need to make a dressing. You can also use a store bought dressing. Check the notes for dressing options.

Notes

Honey Balsamic Dressing
  • 1/4 cup of extra-virgin olive oil
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of honey
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste

Olive Oil-Based Dressing

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • Salt and pepper to taste
