In a bowl, whisk the marinade ingredients, but omit the mayonnaise. You will add the mayonnaise later when you drizzle the marinade over the chicken.Add everything, besides the mayo, to a small bowl and whisk.
In a 9 x 13 dish or ziplock, add the chicken. Pour 2/3 of the marinade over the chicken. Move the chicken around to get it evenly coated. Chill for 1 hour.
To the remaining 1/3 cup of marinade, add the mayo and whisk. Pop in the fridge for later.
After the chicken has marinated, heat your grill to high heat.
Add your chicken thighs and reduce the heat to medium. Let the chicken cook for 5-7 minutes. Flip and cook the other side for another 5 minutes, or until it's cooked through.
Plate your chicken over a bed of spinach or a bun and drizzle the remaining marinade over it. Enjoy!
Notes
If you make this with chicken breast, be sure to use a mallet to tenderize and thin them down so they don't dry out while cooking.
