- 1½ cup all-purpose flour
- ¾ cup granulated sugar
- ½ teaspoon salt
- 3 teaspoons baking powder
- ⅓ cup avocado oil, or other baking oil
- 1 large egg
- ⅓ cup whole milk
- 1 cup semi-sweet chocolate chips
Preheat your oven to 375°F and spray your muffin tin with non-stick spray or add muffin liners.
In a large mixing bowl, add your whisked egg, oil, and milk. Whisk well.
Next, add your dry ingredients- flour, sugar, salt, and baking powder. Stir until combined.
Finally, fold in your chocolate chips. Fill your muffin tins 2/3 to the top.
Bake, uncovered, for 20 minutes. Enjoy!
In order to test for doneness, stick a toothpick in the middle of one of the muffins. If it comes out clean, they're done!
You can make these the night before. Just put them in the fridge and cover with plastic wrap.
The next morning, remove the plastic wrap and bake as directed.
