Mini Quiche Recipe

This easy mini quiche recipe has been a family favorite for so many reasons and is a constant staple and huge hit in my house. My kids love it because they are made in cute little muffin tins, and I love them because they are an easy and quick breakfast option when we need to eat on the go.

Equipment

  • 2 24 count muffin tin
  • 1 Rolling Pin
  • 1 2-3" round cookie cutter
  • 1 skillet
  • 1 large mixing bowl
  • 1 whisk

Ingredients
  

  • 2 refrigerated pie crusts
  • 1 cup ham diced
  • 1 cup cheddar cheese shredded
  • 1 small onion diced
  • 4 large eggs
  • 2 cups heavy cream or milk
  • ¾ tsp salt
  • ½ tsp Italian seasoning
  • ½ tsp garlic powder
  • ¼ tsp pepper

Instructions
 

  • Preheat oven to 375 degrees F and spray muffin tins with non-stick spray.
  • Roll out your pie dough. Using a 2 or 3 inch round cookie cutter, cut your circles out of the pie dough.
  • Fill each muffin tin with one circle of pie dough, making sure to firmly press them against the sides of the tin. Poke the dough a few times in each muffin tin to keep the pie crust from puffing up during the baking process.
  • In a skillet, sauté your diced onion. Remove from heat and add the diced ham to the pan.
  • Spoon the ham and onion mixture into each mini quiche crust.
  • In a large mixing bowl, whisk your eggs, heavy cream, cheese, salt, and seasonings.
  • Pour into each mini quiche carefully.
  • Bake the mini quiches for 25-28 minutes, or until the quiches are set up.
  • Let them cool on a wire rack for 5 minutes and enjoy!

Notes

  • Sautéing any vegetables before adding them to the egg mixture will help ensure that they are soft and perfectly cooked.
  • You can use any type of cheese you like for this recipe. Just use cheeses that melt easily.
  • Using a 2 or 3 inch round cookie cutter or a biscuit cutter will make sure that your pie crust will fit in the muffin tins. Fill each muffin tin with one circle of pie dough, making sure to firmly press them against the sides of the tin. Poke the dough a few times in each muffin tin to keep the pie crust from puffing up during the baking process.
  • To get a perfectly brown crust you can turn on the broiler and add a little bit more cheese to the top of each quiche. Broil for 2-3 minutes or until the top is browned and bubbly. 
  • Spray each tin with cooking spray to avoid the quiche from sticking to the pan, or line the muffin tin with paper liners to make the quiches even more portable. 
  • You can experiment in different ways with different ingredients each time you make them.
