Cinnamon Coffee Cake Bread

Equipment

  • 1 large bowl
  • 1 loaf pan

Ingredients
  

  • 2 cups all purpose flour
  • cups sugar, divided
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • cups buttermilk, or whole milk
  • 1 teaspoon pure vanilla
  • 1 large egg
  • ¼ cup extra virgin olive oil, or other baking oil
  • 1 tablespoon ground cinnamon

Glaze

  • ½ cup powdered sugar
  • 2-4 tablespoons whole milk

Instructions
 

  • Preheat your oven to 350°F and grease a loaf pan well with butter.
  • In a large bowl, add your flour, 1 cup of sugar, baking powder, salt, milk, vanilla, egg, and oil. Stir well until combined.
  • In a small bowl, combine ½ cup sugar and 1 tablespoon cinnamon. Stir.
  • In a greased loaf pan, pour ½ of the batter. Sprinkle ½ of the cinnamon sugar on top.
  • Repeat with the rest of the batter and cinnamon-sugar.
  • Bake, uncovered, for 45-60 minutes or until a toothpick comes out clean when inserted in the middle.
  • Let cool for 10 minutes before removing from the pan.
  • Make your glaze and pour over the bread. Enjoy!

Notes

To switch it up, add:
  • chocolate chips
  • nuts
  • dried cranberries
  • maple syrup to the glaze
