Skillet Filling
- 1 pound ground Italian pork
- 1 each diced bell pepper, green, red, and yellow
- ½ medium onion, diced
Cheesy Bread Topping
- ¾ cups all purpose flour
- ¾ cups water
- 3 large eggs
- 2 tablespoons butter or olive oil
- 1 teaspoon salt
- 1 teaspoon Italian Seasoning
- 3 teaspoons baking powder
- 1½ cup shredded cheddar cheese
Preheat your oven to 400°F.
In a medium cast iron skillet, brown your pork until no longer pink. Drain the meat.
While the pork drains, add your veggies and 1 tablespoon oil or butter to your cast iron. Sauté until the vegetables become tender, but not mushy.
Add the meat back to the cast iron with the vegetables.
In a medium mixing bowl, add your cheesy bread ingredients and whisk briskly until it's completely combined.
Pour the bread mixture over the meat and veggies until they are completely covered.
Sprinkle the cheese on top.
Bake in your preheated oven for 25 minutes or until the bread is golden and baked through.
- Meat- You may use ground beef instead of pork for this meal.
- Vegetables- Another great addition is to add diced sweet potato or even shredded hashbrowns.
- Cheese- Mix up your cheeses to give this dish a different flavor.
