Ingredients

Skillet Filling

  • 1 pound ground Italian pork
  • 1 each diced bell pepper, green, red, and yellow
  • ½ medium onion, diced

Cheesy Bread Topping

  • ¾ cups all purpose flour
  • ¾ cups water
  • 3 large eggs
  • 2 tablespoons butter or olive oil
  • 1 teaspoon salt
  • 1 teaspoon Italian Seasoning
  • 3 teaspoons baking powder
  • cup shredded cheddar cheese

Instructions

  • Preheat your oven to 400°F.
  • In a medium cast iron skillet, brown your pork until no longer pink. Drain the meat.
  • While the pork drains, add your veggies and 1 tablespoon oil or butter to your cast iron. Sauté until the vegetables become tender, but not mushy.
  • Add the meat back to the cast iron with the vegetables.
  • In a medium mixing bowl, add your cheesy bread ingredients and whisk briskly until it's completely combined.
  • Pour the bread mixture over the meat and veggies until they are completely covered.
  • Sprinkle the cheese on top.
  • Bake in your preheated oven for 25 minutes or until the bread is golden and baked through.

Notes

  • Meat- You may use ground beef instead of pork for this meal.
  • Vegetables- Another great addition is to add diced sweet potato or even shredded hashbrowns.
  • Cheese- Mix up your cheeses to give this dish a different flavor.
