Equipment

  • 1 Knife for cutting potatoes
  • 1 baking sheet

Ingredients
  

  • 2 large sweet potatoes, sliced ¼ inch thick
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon thyme
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • 1 cup Parmesan Cheese, grated

Instructions
 

  • Preheat oven to 400°F. Wash, dry, and slice your sweet potatoes to ¼ inch thick.
  • Add parchment paper to a baking sheet and layer your sweet potatoes on the parchment.
  • Brush the oil on the slices and sprinkle on all of the spices.
  • Roast the potatoes for 15 minutes. Sprinkle on the Parmesan cheese and roast for another 5-10 minutes.
  • Let them cool for 5 minutes and enjoy!

Notes

If you have an air fryer, you can also use this appliance to make thick sliced roasted sweet potatoes. To get started, preheat your air fryer to a high temperature, usually around 400°F. While the air fryer is heating up, prepare your sweet potatoes by washing and peeling them, then slicing them into thick rounds. Next, arrange the sweet potato slices in a single, even layer in the air fryer basket. You can sprinkle them with seasoning or drizzle them with oil, if desired. Cook the sweet potatoes in the air fryer for about 10-15 minutes, or until they are tender and crispy. Keep in mind that cooking times may vary depending on the size of your sweet potato slices and the power of your air fryer. You may need to adjust the cooking time or temperature to get the desired results.
