Easy Taco Rollups

This easy casserole dish is a perfect and delicious way to enjoy your next taco Tuesday. It is a simple recipe and has all of the yummy taco bits in one roll up!

  • 1 9 x 13 casserole dish,

Ingredients
  

  • 2 batches pizza dough, homemade or premade
  • 1 pound ground beef, browned
  • 1 packet taco seasoning
  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 can rotel, drained
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 375°F. Grease a 9 x 13 baking dish.
  • In a large bowl, combine all of your ingredients, besides the dough and cheese. Stir it well.
  • Lightly flour your counter and roll out your first batch of pizza dough. If you don't have a recipe, there's one on my blog that is the best! It should be rolled out to roughly be 14 by 10.
  • Spread half of the meat mixture on the dough. Sprinkle with cheese.
  • Roll it up long end to long end, like cinnamon rolls. Slice the rolls about ½ inch thick and place them in your casserole dish.
  • Repeat with the second batch of dough and the rest of the meat and cheese.
  • Bake in a preheated oven for 30 minutes, or until done. If it's getting too brown on top and isn't quite done inside, cover with aluminum foil until it's baked through.

Notes

You may use refrigerated premade dough or make your own.
