This easy taco roll-ups casserole dish is a perfect and delicious way to enjoy your next taco Tuesday. It is a simple recipe and has all of the yummy taco flavors in one roll up!

My recipe is different than other taco pizza rolls because I use homemade pizza crust instead of flour tortillas.

These taco pizza roll-ups are perfect for a Mexican themed meal, appetizers, lunch for kids, school snack, or a holiday party!

My whole family loves this and it is better than regular tacos!

You can use left-over taco meat if you need a new dinner idea!

What are Taco Rollups?

This easy meal is made with simple ingredients that will become a family favorite!

You simply roll out your pizza dough and add a hamburger mixture of browned ground beef, taco seasoning, corn, black beans, and Rotel.

Then you sprinkle the hamburger mixture with shredded cheddar cheese.

Simply roll it up, slice it, and bake it in a casserole dish!

  • Ground Beef– 1 lb ground beef is all you need for the main protein source of this meal. Make sure you drain excess grease.
  • Taco Seasoning– This seasoning is what gives the recipe it’s spicy flavor!
  • Canned Corn– Corn is always delicious in Mexican recipes.
  • Black Beans– Black beans also are often served with Mexican food and are another good protein source.
  • Rotel– Rotel is a yummy combination of tomatoes and green chiles!
  • Shredded Cheddar Cheese– Melted cheddar makes everything better!

Make Taco Rollups in 6 Easy Steps

  1. Preheat oven– While the oven is preheating to 375 degrees F, grease a 9×13 dish with cooking spray.
  2. Combine meat mixture– In a large bowl, after you brown beef, combine all of your ingredients, besides the dough and cheese.
  3. Assemble– Roll out pizza dough on lightly floured surface, then spread half of the meat mixture on top of the dough and then sprinkle cheese on top. 
  4. Cut taco rolls– Roll up the dough from long ends. Then slice the rolls about half an inch thick and place in your casserole dish. 
  5. Repeat– Repeat steps 3 and 4 with other half of meat mixture and cheese.
  6. Bake– Bake for 30 minutes until golden brown.

  • Store-Bought Pizza Dough– This can be used as a substitute for homemade pizza dough.
  • Homemade Taco Seasoning– Of course you can use your own homemade seasoning! It would be delicious!
  • Baking Sheet– You can use a baking sheet to cook the taco rollups. Just make sure you use parchment paper or grease the pan first. Cooking times might vary.
  • Crescent Roll Dough– If you do not have pizza dough, you can substitute crescent roll dough. Cooking times may vary.

Ingredients
  

  • 2 batches pizza dough, homemade or premade
  • 1 pound ground beef, browned
  • 1 packet taco seasoning
  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 can rotel, drained
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 375°F. Grease a 9 x 13 baking dish.
  • In a large bowl, combine all of your ingredients, besides the dough and cheese. Stir it well.
  • Lightly flour your counter and roll out your first batch of pizza dough. If you don't have a recipe, there's one on my blog that is the best! It should be rolled out to roughly be 14 by 10.
  • Spread half of the meat mixture on the dough. Sprinkle with cheese.
  • Roll it up long end to long end, like cinnamon rolls. Slice the rolls about ½ inch thick and place them in your casserole dish.
  • Repeat with the second batch of dough and the rest of the meat and cheese.
  • Bake in a preheated oven for 30 minutes, or until done. If it's getting too brown on top and isn't quite done inside, cover with aluminum foil until it's baked through.
