215 ounce cans great northern beans,drained and rinsed
24 ouncecans diced chiles
115 ouncecan corn,drained
1teaspoonsalt
½teaspoongarlic powder
1teaspoonblack pepper
1teaspooncumin
1teaspoonoregano
½teapsoonchili powder
¼teaspooncayenne powder
1bunchchopped cilantro
6ouncescream cheese
¼cupwhole milk,or half and half
Instructions
In your slow cooker, add the chicken to the bottom. On top of the chicken, add the onion, beans, corn, chiles, cilantro, and spices/seasonings.
Add the chicken broth to the slow cooker. Stir and cover. Cook on LOW for 6 hours. If you don't have that much time, you may cook on HIGH for 4 hours.
After 5 or 6 hours, check the chicken. If it's done, remove the chicken and shred it with forks or a food processor. Add the chicken back to the crockpot and stir.
Add the cream cheese and milk to the soup. Stir. Place the lid on top and cook on HIGH for another hour, or until the cream cheese is melted and the soup is creamy.
