How to Make Crockpot White Chicken Chili
- Gather ingredients- Gather all of your ingredients and chop your onion and cilantro.
- Add to Slow Cooker- Add your chicken, onion, beans, and corn to the crockpot. Add the other ingredients on top.
- Cook on low- Cook on low for 6-8 hours or until the chicken is cooked through.

Slow Cooker White Chicken Chili

- 1 7 quart slow cooker
Ingredients
- 1½ pounds boneless skinless chicken breast
- 1 small yellow onion, diced
- 24 ounces chicken broth
- 2 15 ounce cans great northern beans, drained and rinsed
- 2 4 ounce cans diced chiles
- 1 15 ounce can corn, drained
- 1 teaspoon salt
- ½ teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon oregano
- ½ teapsoon chili powder
- ¼ teaspoon cayenne powder
- 1 bunch chopped cilantro
- 6 ounces cream cheese
- ¼ cup whole milk, or half and half
Instructions
- In your slow cooker, add the chicken to the bottom. On top of the chicken, add the onion, beans, corn, chiles, cilantro, and spices/seasonings.
- Add the chicken broth to the slow cooker. Stir and cover. Cook on LOW for 6 hours. If you don't have that much time, you may cook on HIGH for 4 hours.
- After 5 or 6 hours, check the chicken. If it's done, remove the chicken and shred it with forks or a food processor. Add the chicken back to the crockpot and stir.
- Add the cream cheese and milk to the soup. Stir. Place the lid on top and cook on HIGH for another hour, or until the cream cheese is melted and the soup is creamy.
- Serve hot and enjoy!
