One day last year, I had some leftover sourdough bread that was about to go bad. I didn’t want to waste it, so I started thinking about what I could make with stale sourdough.
I was trying to plan supper and I thought that maybe we could have French Toast and call it a “breakfast-supper,” which my kids love.
Then, I remembered that we had a ton of salad greens, some cucumbers, and homemade chicken tenders in the refrigerator. My next thought was to make some homemade croutons!
That was the beginning of my obsession with homemade croutons. They are extremely easy to make and the salads instantly feel fancy.
Can you make croutons with Sourdough Bread?
Sourdough or french bread is the best bread for crouton making. The structure of the bread makes cutting and seasoning the bread easier since it won’t fall apart as you work with it.
How do you make Sourdough Croutons?
- Dice– Cut bread into cubes
- Drizzle with oil– Drizzle the bread with oil and mix it to coat all sides in oil.
- Season– Season the croutons with italian seasoning and toss to coat all sides.
- Bake– Place on a parchment lined baking sheet and bake in a preheated 400°F oven for 5-7 minutes.

If you don’t want to make your own bread, simply grab a loaf from the local grocery store. Most grocery stores carry sourdough in their bakery section.

- Sourdough Bread– You may use whatever bread loaf you want, but stale bread works the best! If I don’t have any stale bread, I slice it and allow it to sit on the counter for a few hours before making the croutons.
- Olive oil– You can use whatever oil your family prefers. I have also used avocado oil with great success and it doesn’t change the flavor profile.
- Italian Seasoning– Sprinkle this all over the croutons after drizzling with olive oil. You can use a seasoning from the store or make your own… recipe below.

- 2 Tablespoons Dried Basil
- 2 Tablespoons Dried Oregano
- 1 Tablespoon Dried Rosemary
- 2 Tablespoons Dried Parsley
- 1 Tablespoon Thyme
- 1 Teaspoon Garlic Powder
Adaptations for Italian Sourdough Croutons
Salt and Pepper Croutons
Instead of using 2 teaspoons of italian seasoning, flavor your croutons with salt and pepper. Be sure to taste test them and add more if needed.
Garlic and Parmesan Croutons
Sprinkle croutons with 1 teaspoon of garlic and sprinkle grated parmesan over the croutons before baking.
Basil and Rosemary Croutons
Basil and Rosemary is growing wild right now, so grab some fresh from your herb garden and chop it finely. Sprinkle it with the fresh herbs after drizzling with oil. You may also use dried herbs for this recipe.

Ingredients
- 1 loaf Sourdough bread
- Olive oil
- 2 Teaspoons Italian Seasoning
- Salt and Pepper, to taste
Instructions
- Preheat oven to 400°F.
- Cut bread into cubes. You can make them the size you are wanting for your salad.
- Add the diced bread to a medium mixing bowl. Drizzle the bread with oil and mix it to coat all sides in oil.
- Season the croutons with Italian seasoning and toss to coat all sides.
- Place the bread in a single layer on a parchment lined baking sheet. Bake in a preheated 400°F oven for 5-7 minutes.
