- 1 9 x 5 loaf pan
- 1 small saucepan
Ingredients
- 2 cups all purpose flour
- ½ cup unsalted butter, softened
- 2 cups apple cider
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla
- ½ teaspoon ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Crumble Topping
- ¼ cup butter, melted
- ½ cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 350°F and grease your loaf pan with non-stick spray, butter, or line it with parchment paper.
- In a small saucepan, warm your apple cider over medium-high heat until it is to a boil. Once it is boiling, reduce the heat and simmer for 20 minutes, or until it is reduced by half. It make take a bit longer, so keep an eye on it.
- In the mixing bowl of your electric mixer, cream the brown sugar and butter.
- Add in the egg and vanilla. Beat for 10 seconds.
- To that, add the reduced apple cider, flour, cinnamon, baking powder, baking soda, and salt. Mix until combined. Don't overmix, just mix until the ingredients are fully incorporated.
- Pour your batter into your prepared loaf pan and sprinkle the crumble topping over it.
- Bake for 50 minutes, or until a toothpick inserted in the middle comes out clean. Let cool for 15 minutes, slice, and enjoy!
