Equipment

  • 1 9 x 5 loaf pan
  • 1 small saucepan

Ingredients
  

  • 2 cups all purpose flour
  • ½ cup unsalted butter, softened
  • 2 cups apple cider
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Crumble Topping

  • ¼ cup butter, melted
  • ½ cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat your oven to 350°F and grease your loaf pan with non-stick spray, butter, or line it with parchment paper.
  • In a small saucepan, warm your apple cider over medium-high heat until it is to a boil. Once it is boiling, reduce the heat and simmer for 20 minutes, or until it is reduced by half. It make take a bit longer, so keep an eye on it.
  • In the mixing bowl of your electric mixer, cream the brown sugar and butter.
  • Add in the egg and vanilla. Beat for 10 seconds.
  • To that, add the reduced apple cider, flour, cinnamon, baking powder, baking soda, and salt. Mix until combined. Don't overmix, just mix until the ingredients are fully incorporated.
  • Pour your batter into your prepared loaf pan and sprinkle the crumble topping over it.
  • Bake for 50 minutes, or until a toothpick inserted in the middle comes out clean. Let cool for 15 minutes, slice, and enjoy!

Crumble Topping

  • In a small bowl, add your butter, sugar, and cinnamon. Mix well with a fork.

Notes

This bread also tastes delicious with a simple icing or glaze.
Add in 1/2 cup diced apples for crunch.
