She made these meals that looked incredible and seemed to be fairly simple, but the pasta…

The pasta was cooked to perfection and never wilted or mushy.

Over the years, I’ve learned how to manage pasta in the kitchen, whether making my Italian meat sauce with spaghetti, creamy white sauce with chicken, smoked mac and cheese, or my bright lemon garlic pasta.

Whether you’re cooking with fresh pasta or packaged pasta, cooking it to perfection is key to making the best pasta dishes.

Thankfully, it’s not too hard.

Pasta requires only a few things- space, boiling water, and salt.

The most important thing when cooking pasta, though, is to cook it until al dente.

What does al dente mean?

The term al dente is an Italian phrase that means “to the tooth.” In simple terms means it should still have some bite to it.

You want your pasta to be cooked, but still have a slight resistance when you are eating your favorite pasta recipe, even if it’s a simple pasta salad.

How to cook perfect al dente pasta

If pasta dishes are some of your favorite foods, you want to get the knack for the correct cooking time when boiling dry pasta.

Most pasta packages list the recommended cooking time for getting al dente pasta.

A good rule of thumb is to turn off the heat and strain it 1 to 2 minutes before the recommended time.

This will ensure that your pasta still has a bit of a bite to it, especially if you will be tossing it with a hot pasta sauce.

Each type of pasta cooks differently, so be sure to try a piece of pasta to test if it’s done.

I like to test it starting at 4 minutes after I add the pasta to the water. I test it every 2 minutes until it’s ready.

The outside will be soft, but the middle of the pasta will still have a little resistance.

  • Salted Water- This is a key to having great tasting pasta.
  • Cooking Time- Don’t overcook the pasta. Cook it until it’s al dente or a little less if the cooking process will continue with the sauce.

Why to cook pasta in a large pot

Regardless of the type of pasta you’re cooking, you need a large pot.

The pasta needs enough room to move around as it cooks.

If it is crowded, the chances of it gumming up and sticking to the other pasta increases.

Plus, if you have too much pasta in comparison to how much water you are using, the pasta won’t cook evenly.

To make sure you have enough water for your dried pasta, check the package directions.

If the pasta packaging doesn’t say, a good rule is to use 4 quarts of water for every pound of pasta.

How hot does the water need to be for the perfect pasta?

Do not add the pasta until the water is a full boil, especially, if you are cooking with fresh pasta.

If your water isn’t hot enough, the pasta will get mushy instead of cooking properly.

You also don’t need to put the lid on the pot. Simply let it boil with the pasta and without the lid.

The water temperature will cool for a moment after you add the noodles, but it will quickly rebound.

How to salt water for good pasta

Using a couple of tablespoons of salt in the water is key for adding flavor to the pasta while it cooks.

After the water is at a rapid boil, toss in a couple of tablespoons of salt before adding the pasta noodles.

Be sure you wait until the water is already boiling since adding the salt to non-boiling water will make it take longer to reach a boil.

Don’t worry about using too much salt.

A general rule is to use 1 1/2 tablespoons of salt for each pound of pasta.

Many Italian chefs recommend more salt for pasta that will be used with milder pasta sauces to add flavor.

How long do you cook pasta?

Even though I have cooked pasta a million times, I peek at the packaging every single time just to be sure I am in the right ballpark for the pasta cook time.

Most pastas take 7-12 minutes to cook, depending upon the type of pasta.

Thicker pasta will need to cook longer to ensure it’s cooked all of the way through.

Other pastas, such as angel hair, will cook at a considerably faster rate.

Homemade pasta is even quicker at cooking and only takes 2-3 minutes to fully cook.

Steps for cooking pasta to perfection

  1. Bring 4 quarts of water to a fast boil in a large pot.
  2. Toss in 1 1/2 tablespoons of salt into the boiling water.
  3. Add in your pound of pasta and give it one stir with a wooden spoon.
  4. Set your timer for 2 minutes before “al dente” according to the package of pasta.
  5. Reserve one cup of pasta water for your creamy sauce and strain the pasta in the kitchen sink.
