Make Quesadillas in 3 Easy Steps

  1. Chicken Filling– To make delicious baked chicken quesadillas, you first need to prepare the chicken mixture. Start by preheating your oven to 450°F. Then, take a large mixing bowl and combine pre-shredded or small pieces of cooked chicken with your taco seasonings. You can use a combination of salt, pepper, chili powder, cumin, garlic powder, and paprika to add flavor to the chicken mixture if you don’t have a packet of taco seasoning. Add all of the other ingredients, besides the tortillas, to a large bowl and mix well.
  2. Assembling the Quesadilla– Now it’s time to assemble your quesadillas. Brush melted butter on a baking sheet and start placing your tortillas around the baking sheet. Start with the perimeter of the cookie sheet, slightly overlapping the tortillas. Finish by placing two tortillas in the middle of the pan. Dump your filling on the tortillas and spread it evenly. Fold the tortillas and brush with butter!
  3. Baking the Quesadilla- Place a cookie sheet on top to prevent burning and bake for 25 minutes.

Ingredients
  

  • 3 cups shredded chicken
  • 3 cups shredded cheddar cheese
  • 12 large burrito tortillas
  • 4 tablespoons melted butter
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can rotel
  • ¼ cup red onion, diced
  • 1 cup sour cream
  • 1 packet taco seasoning

Instructions
 

  • Brush melted butter on a cookie sheet and preheat your oven to 450°F.
  • In a large mixing bowl, combine all of your filling ingredients and mix well.
  • Layer your tortillas around the outside of your baking sheet. Place two tortillas in the center of your baking sheet. You should have your tortillas overlapping and also hanging off of the edge of the pan so you can fold the tortilla over the top of the filling.
  • Next, place your filling on top of the tortillas and spread it out evenly.
  • Fold the tortilla over and brush butter on top.
  • Place another cookie sheet on top of the quesadilla to hold the folded tortilla down and to keep it from burning.
  • Bake for 25 minutes or until the tops are golden and crispy.
